Summer Lovin’ Green Smoothie

If you love relaxing by the beach and/or pool sipping on a Pina Colada then this smoothie is for you — without the alcohol and bits of coconut. This recipe gets its green color from spinach and the dairy-free creaminess from frozen banana and coconut milk. 

When E was a mere 6 weeks old I realized he had some type of intolerance. Many days and nights of excessive spit up, stinky super wet poops, and some sort of fine little red rash could be found around his mouth and on his bottom. He was exclusively breastfed and I had to figure this out. With my professional background I didn’t seek help from our healthcare provider — but I would strongly suggest talking about it with yours if you’re seeing any similar symptoms with your little ones. Instead I decided to revamp my diet and do an elimination trial. I went with the most obvious culprit and said good-bye to my dairy. Eliminating dairy can be really tough. You’re not just eliminating milk, cheese, and ice cream. You have to watch for anything made with any type of milk protein which includes whey, casein, lactose, cream, butter, etc. Until you go looking, you don’t realize where this stuff is hidden.

It was now the middle of summer and I was craving something creamy and sweet to sip on. So I got a little creative and came up with this Summer Lovin’ Green Smoothie. It brought me back to my childhood. I loved hanging out by the pool of a hotel down in the Florida Keys, listening to someone playing Jimmy Buffet tunes on their guitar, while drinking a virgin Pina Colada.

Since it’s St. Patrick’s Day this weekend and here in the USA we like to take that as an excuse to eat and drink green things, I thought it would be fun to introduce this kid-friendly nutritious green drink.

Summer Lovin’ Green Smoothie Recipe

Cast of characters:

1 handful spinach

1.5 frozen bananas (*tip – peel the bananas and wrap each individually in plastic wrap, then place them in a large ziplock freezer bag to freeze. That way you can take out one banana at a time and not have a chunk of frozen banana)

2 cups frozen pineapple

1 cup Coconut Milk  

*use liquid sweetener of your choice, if desired

In your empty blender add your spinach on the bottom. Place the frozen fruit on top. Pour the milk over the ingredients. I use the smoothie button on my Ninja   However, if your using a traditional blender you should pulse on high/frozen drink until all ingredients are mixed together. Then continue blending on high for an additional 30 seconds. Pour, close your eyes to imagine your hanging on a tropical beach somewhere, and take a sip. Your kids will love this smoothie that’s reminiscent of a virgin pina colada.
